Cookies and Bars


Amber's Peanut Butter Bars

These were a big seller at the Youth Fund Raiser.

1 Cup brown sugar                    1 Cup sugar
1-1/2 Cups Peanut Butter         3 eggs
1-1/2 Cups quick oats               1 to 2 Cups mini M & M's
1 Cup Chocolate Chips

Mix all together and heat oven to 350. Put in a greased cookie sheet. bake for 15-18 minutes.  May not look done but take out and let cool.  Don't over bake.





Special K Squares
1 cup sugar
1 cup white syrup
1 ½ cups peanut butter
6 cups Special K cereal
1 package of Milk Chocolate chocolate chips
½ package of Butterscotch chips
Spray/butter a 9”x 13” pan
Put the sugar and white syrup into a pan and bring to a rapid boil
Remove from heat and stir in the peanut butter
Put the Special K cereal into a large mixing bowl, pour the peanut butter/syrup mixture over the cereal and mix thoroughly. Place the cereal mixture into the buttered/sprayed pan and flatten to a level thickness. Cool a room temperature or in the refrigerator.
Melt the combined chips in a double boiler, stirring to a smooth consistency.
Frost the cooled Special K mixture. Allow the frosting to harden prior to cutting. I removed the Special K mixture from the pan PRIOR to frosting. As the frosted Special K treats are extremely rich, I cut into 1” squares.   ENJOY!!!!!

 Apple Cheesecake Bars
1 pouch (1lb 1.5oz) Betty Crocker oatmeal cookie  mix
1/2 cup firm butter or margarine
2 pkgs (8oz each)cream cheese, softened
 (1/4 cup sugar)optional
2 tablespoons flour
1 teaspoon vanilla
1 egg
1 can (21oz) apple pie filling
1/2 teaspoon cinnamon
1/2 cup chopped walnuts
Preheat oven to 350 F.  Spray bottom and sides of a 13" X 9" ban with cooking spray. Place cookie mix in a large bowl.  Cut butter into mixture  with pastry blender or fork until crumbly.  Save 1-1/2 cup.  Press remaining crumbs in bottom of pan.  Bake for 10 minutes.
In a large bowl beat cream cheese, (sugar), flour, vanilla, and egg with mixer on medium till smooth. Spread cream cheese mixture over partially baked crust.  Mix cinnamon into pie filling.  Spoon evenly over cream cheese mixture.  Sprinkle reserved crumbs over top.  Sprinkle with walnuts.
Bake 35-40 minutes until light golden brown.  Cool about 30 minutes.  Refrigerate at least 2 hours to chill. 


Susan B's Jumbo Chocolate Chip Cookies 

 Here's another cookie recipe that got rave reviews.  This is a recipe of Susan B.  Lindsey made them and brought them to Game Night. 

1 c. butter, softened
1 c. sugar
1 c. packed brown sugar
2 eggs
2 tsp. vanilla
2-1/2 c. flour
1 tsp. baking soda
1 tap. baking powder
1 tsp salt
2-2/3 c. flaked coconut
1 c. semisweet chocolate chips
1/2 c. milk chocolate chops
5 oz. white chocolate, chopped
In a large bowl, cream butter and sugars.  Add eggs, one at a time beating well after each addition.  Beat in vanilla.  Combine the flour, baking soda, baking powder and salt; gradually add to the creamed mixture. Stir in the coconut and choc. chips.  Shape into tablespoonfuls of dough. Bake at 350 for 12-18 min. In a microwave-safe bowl, melt white choc.  Dip on one side of cookies or spread on top .  Place on waxed paper; let stand 'til set.



Darnelda's Premier Cheesecake Cranberry Bars

Darnelda brought these for coffee time after church. 
There were numerous requests for the recipe.
2 cups flour
1-1/2 cup oatmeal
1/4 cup packed light brown sugar
1 cup (2 sticks) butter or margarine (soft)
2 cups (120z.pkg) Nestles Premier White Morsels
1 pkg. (8oz.) cream cheese (soft)
1 can (14oz.) sweetened condensed milk
1/4 cup lemon juice
1 tsp vanilla
1 can(16oz.) whole-berry cranberry sauce
2 tbsp. cornstarch
Combine flour, oats, brown sugar. Add butter, mix until crumbly.  Stir in white morsels.
reserve 2-1/2 cups mixture for topping.  With floured fingers press remaining mixture into pan.
Beat cream cheese until creamy.  Add condensed milk, lemon juice and vanilla. 
Mix until smooth.  Pour over crust.  Combine cranberry sauce and cornstarch in a medium bowl.
Spread ixture over cream cheese mixture.  Sprinkle reserved crumb mixture over cranberry mixture.
Use a 13X9in pan.  Back at 350 degrees for 35-40 min. until center set.  Refrigerate until serving.


Fun No Bake Cookies  made by the After School Kids

Fun to make - Fun to eat.

1 Cup creamy peanut butter
2 Tbsp butter or margarine
1/2 Tsp vanilla
1 Cup powdered sugar
2 Cups Rice Krispies
Cream together peanut butter, butter, and vanilla.  When blended add
1 Cup powdered sugar.  When well mixed add 2 Cups Rice Krispies. Blend together.
On waxed paper with hands shape into a quarter sized cylinder.  Slice into coin cookies.
12 oz pkg semi sweet chocolate chips
2 Tsp butter or margarine
Shape into balls.  Chill in refrigerator or freezer.
While the peanut butter balls are chilling, melt the chocolate in the microwave
in a bowl that is deep enough for dipping.

Insert a toothpick into a peanut butter ball and then dip it into the
chocolate, turning quickly to cover the entire cookie.

Ione's Signature Bars

When Ione brought these bars everyone hoped there would be some for them.

Mix: 1-1/2 C flour, 3/4 C brown sugar, 1/2 C butter.
Bake in a 11" X 15" pan for 10 min. at 350
Melt: 6oz butterscotch chips, 1/2 C corn syrup, 2 T butter
Pour 13oz can of mixed nuts over crust.
Pour butterscotch chihps mixture over top of mixed nuts.
Bake another 10 min. at 350
Monica's Pistachio Cookies
1 Cup softened butter
1/2 Cup firmly packed brown sugar
1 tsp vanilla
2 Cups flour
1 Cup choped roasted, salted, pistachios
In a large bowl, beat butter, brown sugar, and vanilla at medum speed till creamy.
Slowly add flour and pistachios until combined.  Shape dough into 2 logs, 8 inches each and wrap in plastic wrap.
Regrigerate for at least 4 hours up to 3 days. 
Preheat oven to 350. Line backing sheets with parchment paper.  Cut logs into 1/4 " slices.  Place on backing sheets.
Bake 8 - 10 minutes - until edges are golden brown.  Cool completely.

 Susan W's Sour Cream Cookies

Susan W. brought these cookies to game night.  They were a great success.

5 C Flour
1 C Butter
1 tsp baking soda
1 3/4 C Sugar
1 tsp baking powder
1 C Sour Cream
1/2 tsp salt
2 eggs
1 tsp vanilla
Mix butter, sugar.  Add sour cream and eggs.  Add flour, soda, baking powder, and salt.  Mix and add vanilla. 

 Chill 1 hour.  Roll and cut  (I just use a cookie scoop)  Bake at 350 degrees until very lightly tan.


Melt and lightly brown 1/2 cup margarine.  Add 3-3 1/2 cups powdered sugar, 1 tsp vanilla and milk to make a smooth frosting.



 Brenda E.'s Peanut Butter Bars

There were no leftovers of these bars at Game Night

1 1/2 packages crushed graham crackers (that's about 15 crackers)
1 1/3 c. powdered sugar 1/2 c. melted butter 1 1/2 c. peanut butter 1 teaspoon vanilla
Blend and press in 9 x 13 pan.
Frosting: Use Stovetop or microwave 1/4 c. butter 1/3 c. milk 1 c. sugar boil 1 minute remove and
add 1/2 c. chocolate chips and 5 large marshmallows.
Stir until smooth. Pour over pb crust. Chill.
