Vegetable Dishes

Darlene's Tangy Mustard Cauliflower
 
1 medium head of cauliflower
1/2 C. mayo
1/2 tsp dried onion flakes
big tsp prepared mustard
1/2 C or more  shredded cheddar cheese
 
Leave the cauliflower whole.  Steam it in the microwave
covered with Saran Wrap for 5 minutes with a little water.
Frost with mayo and mustard - pat on cheese
Zap for 30 seconds unwrapped.
 
Darnelda brought this salad to the Charge Conferrence Potluck,
really fresh tasting.
 
Frito Corn Chip Salad 
1/2 cup onions, diced
1/2 cup green bell pepper, diced
1/2 cup red pepper, diced (may also add 1/2 cup yellow pepper,optional)
1/2 cup celery
1 1/2 cups cheddar cheese, finely shredded
1 bag (10oz Frito Corn Chips)
2 cans (15oz each) whole kernel corn
3 tbsp. ranch dressing
1/2 cup miracle whip
 
Drain corn.   Mix all ingredients except Fritos in a large bowl.  Chill for a couple of hours.   Add Fritos just before serving.   Makes 10-12 servings
 

 
 
 
Connie F shares this recipe for a Vegetable Hot Dish.
 
1 box each frozen cauliflower, carrots and green beans. (I used 2 pkgs. California Blend frozen vegetables).
1 small jar onions (I chopped fresh onion to your taste on top of vegetables).
Place in large casserole dish. (greased)
Mix together 2 cans mushroom soup, 1 cup Velveeta cheese and 1/4 cup milk. 
Heat in microwave until smooth and cheese is melted and then pour over vegetables. 
Top with slivered almonds or crushed potato chips.  (I prefer the chips)
Bake at 350 for 45 minutes to one hour.
 

 
 
 
Connie F.s recipe for Baked Cabbage
IN A 9X13 GREASED PAN, CHOPPED (NOT FINE) FRESH CABBAGE
TO THE TOP OF THE PAN.
PLACE SLICES OF VELVEETA CHEESE TO COVER TOP OF THE CABBAGE. 
PREPARE WHITE SAUCE
(CRISCO (MELTED), FLOUR (2 TO 3 TBS), THEN
ADD MILK TO MAKE A THIN SAUCE. 
ADD SALT AND PEPPER TO TASTE.  POUR OVER CHEESE LAYER. 
BAKE AT 350 DEGREES  (Covered  with foil) TILL FORK IN CABBAGE
SHOWS SOFTNESS. 
(45 minutes to one hour). 
REMOVE FOIL AND COVER WITH TOASTED AND CUBED BREAD.
  RETURN TO OVEN FOR 15 MINUTES TILL CRISP AND BROWN.
